The multi-Michelin starred chef's restaurant at One & Only the Palm Dubai - regarded as one of the city’s top fine-dining restaurants.

One of only a handful of chefs worldwide to have achieved Michelin’s highest rating of three stars, chef Yannick Alleno continues to impress with his Dubai restaurant Stay, which has been awarded two-Michelin stars in the first-ever Michelin guide for the Middle East. The impossibly glamorous dining room (all mirrored surfaces and monochromatic colour schemes) serves as the backdrop for an enchanting menu of classic French dishes which evolve with the seasons. On warm nights, dine on the romantic outdoor terrace, which overlooks manicured gardens.

Highlights on the set menus include: sea urchin with a light fennel foam, langoustine cannelloni with black truffle and wagyu beef mille-feuille with mushrooms and fermented beetroot. Dinner is priced from AED 680 per person for a four-course menu - with paired wines an additional AED 500 or there’s the six-course menu at AED 800 per person - with paired wines an extra AED 700 per person.

Sea urchin with a light fennel foam, langoustine cannelloni with black truffle and roasted turbot with glazed artichoke and a Parmesan gratin. Other dishes include: wagyu beef mille-feuille with mushrooms and fermented beetroot, caramelised butternut squash ravioli with melted butter infused with citrus and bitter almonds, and dark chocolate cream dessert with ice cream.
