Sho Foo Doh at The Institute of Light

Chef Fumio Tanga and his Sho Foo Doh team are cooking up [un] conventional Japanese food & Hiroshima style Okonomiyaki.

Hiroshima-born, London-based chef and okonomiyaki master Fumio Tanga new residency specialises in Hiroshima style Okonomiyaki savoury pancakes (containing a variety of ingredients) and complemented by some contemporary - unclassic - Japanese dishes.

Translated as ‘what ever you’d like, grilled’, these pancakes are a new foodie favourite. When it comes to cooking okonomiyaki there are two styles from different regions of Japan - "Hiroshima style", where the plain pancake is grilled, then topped with the chosen cooked ingredients, or "Osaka style", where all the ingredients are mixed into the batter, then cooked. Both varieties are available alongside vegan and gluten free versions.
