The kitchen is overseen by Ricardo Sanz, executive chef of the Michelin starred Kabuki group (with restaurants in Valencia, Madrid & Malaga), together with Manuel Campos Gaullar and Abel Matutes, creators of the high-end Spanish restaurant concept Tatel - which has outposts in Madrid, Ibiza and Miami. Cristiano Ronaldo joined Rafa Nadal, Enrique Iglesias and Pau Gasol as partners of this international hospitality group.
The dining space (as with the Ibiza outpost) features plenty of Indo-Chinese visual references - aptly named after a butterfly subspecies that lives in the region - with plenty of decorative elements, a colonial-style trompe d’oeil mural and a vertical garden. Food-wise - expect Japanese techniques and flavours applied to Mediterranean products and traditions - so called 'Meppon' cuisine. The menu features a lot of fresh fish and seafood from the Mediterranean; raw dishes including tatakis, tartares, sashimi, sushi, gyozas, and tiraditos.
Mediterranean flare
Tiradito of scallops with Ibizan sobrasada; butterfish nigiri with white truffle; Iberico pork gyoza; usuzukuri toro pa amb tomaquet - thinly sliced tuna belly sashimi with grated tomato, olive oil and bread and 48-hour braised Wagyu teriyaki.
Santa Maria - sherry wine, homemade spice mix, tomato & basil and Harakiri with sake, lime, egg white & shiso syrup.
