The Korean-American chef (a former professional snowboarder) has built up a successful empire of restaurants from Las Vegas to Jakarta and Toronto to Bangkok with his self-described menu of modern Japanese food with Korean accents -  derived from seasonal produce and artisanal ingredients. 

Expect an eclectic fusion menu of modern Japanese cuisine with a Korean essence prepared with seasonal produce and artisanal sourced ingredients, from duck prosciutto and filet tobanyaki to lamb chops and gambero prawns and Back's famous tuna pizza and wagyu tacos. 

Located on the 5th floor at W Dubai - The Palm the entrance takes the form of a vortex while the indoor and outdoor space boasts abstract, design-led interiors featuring an open kitchen, counter-top Robata Grill and expansive dining room with panoramic views, and an outdoor terrace - complete with floating bar.
