Embracing the Yucatán’s indigenous ingredients sourced locally - beef from Cancun, pork from Vallodolid, and fish from local fishermen etc., Hernandez (one of the rising stars of Mexican cuisine) highlights simple, seasonal and local Mexican fare - mostly cooked in a brick-oven grill.
