Beltran (known for his soulful blend of haute, hip and down-to-earth food at Ariete) has teamed up with fellow local chef Justin Flit of Proof. Housed next door to Ariete and the recently re-opened Proof, the menu is heavy bent toward pastas and seafood dishes alongside a cocktail program created by beverage director Felipe Ojeda - of Taurus Beer & Whiskey House acclaim.
The bright restaurant of whitewashed beiges and blues with birchwood tables, houses a glass pasta-making room which sits side-by-side with a raw bar stocked with fresh seafood.
