Sestina offers a healthy, plant-based adaptation of universally-loved Italian classics using authentic techniques and recipes that remain true to the cuisine, and impeccably-sourced ingredients - with dishes such as stuffed shells with vegan ricotta and spinach,pumpkin ravioli alfredo, and creamy canestri pasta with vodka sauce.

Brown butter gnocchi served with pumpkin seed parmesan; escarole topped with smoked ricotta, artichoke, preserved lemon, and pickled red onion; and zeppole served with chocolate ganache.
