Ramen Tatsunoya

Following a series of pop-ups, Ramen Tatsunoya has launched its first US outpost in Pasadena's Old Town.

The specialist ramen chain, which has 14 shops in Japan, has opened on Fair Oaks Avenue, in the former Bella's Gourmet Pizza site.

The menu offers three different types of ramen bowls, including the signature “strong flavor” koku ramen, the jun ramen, a subtler broth, and a spicy miso tonkotsu broth. What makes the tonkotsu broth different at Tatsunoya is the fact that instead of simmering  pork bones, they slow cook pig-head bones in water for 15 hours, resulting in a much more intense flavor.

Toppings include things like strips of wood ear mushrooms, bean sprouts, green onions, a soft-boiled egg or pork chashu. Other menu items include pork dumplings and sushi rolls.

Jun Tonkotsu and Koku Tonkotsu are the signature ramen bowls, which come topped with strips of wood ear mushrooms, bean sprouts, green onions, a soft-boiled egg or pork chashu.
