Knead & Co

The latest addition to Grand Central Market comes from Chef Bruce Kalman, whom you might recognize from his delicious pastas and porchetta at Union in Pasadena.

At Knead & Co, he is focusing on handmade pasta, which is made using locally milled flour from Grist & Toll in Pasadena.

Open for breakfast, lunch and dinner, seven days a week, Knead & Co features two bars, seating 16 people, which overlook the open kitchen. Here, you can watch Kalman's team make pasta in 20 different shapes in the kitchen’s “pasta lab.” Varieties include things like charcoal wheat orzo, squid ink garganelli and tagliolini or spelt cavatelli.

But the menu features not only pasta and also offers breakfast dishes such as breakfast raviolo with farmegg, kale, ricotta and San Marzano tomatoes; and Polenta Porridge with berries, figs, pistachios, and a 63-degree egg. Other options include paninis, grain bowls, salads, sandwiches, and desserts like tiramisu, zeppole and cannoli.

Grand Central Market is the foodie place in Downtown right now.
