Nightlife impresarios (La Descarga, Harvard & Stone and five more theatrical boites) Johnnie and Mark Houston have brought a vintage look, a bit of class and a New Orleans’ party attitude to Hollywood via their inimitable restaurant Butchers & Barbers. Although the compact bar and restaurant feels like a 1920s era establishment, it’s all pretty modern.
Cocktails are of-the-moment, while some salute Old Hollywood stars and others are served from mini-casks. The Greta Garbo features hazelnut-infused Belle Meade bourbon while the Lillian Gish mixes Laird’s Bonded Applejack, lime juice, sherry and green apple. The name is a tip-off to a menu and a chef committed to in-house butchery, meat curing and house-made charcuterie. From the tempting bar snacks to the 28-day dry-aged côte de boeuf, there’s much for carnivores although the roasted cauliflower is a crowd pleaser. Expect a dynamic scene; there’s a late-night menu available after 11 p.m.
