This hotly-anticipated food hall will take up a 150,000-square-foot space offering over 100 vendors - both retail and wholesale - made up of a dream team of chefs and culinary talents from around the world. Celebrity chef and TV personality Bourdain, who is collaborating with entrepreneur Stephen Werther (the owner of the WiNK boutique chain) on the project, has only revealed limited details. So far only a number of vendors have been confirmed, including Jason Wang with his mini Chinese food empire Xi'an Famous Foods - originally championed on an episode of No Reservations - and the Spotted Pig's April Bloomfield and Ken Friedman, who have agreed to operate two prepared-food stalls.
The dining experience will be based on the hawker markets of Singapore, chanelling the chaos and crowds, and serving a wide range of global cuisine. There will also be a farmers market, a butchers, a fishmongers, a bakery and a pastry shop, a tapas bar, a tea shop, a 1,500 square-foot oyster bar, and an Asian-influenced beer garden, as well as a full-service restaurant with a mezzanine overlooking the mall.
The design comes from Roman and Williams (Lafayette, Upland, and The Breslin), and will be inspired by the film Blade Runner.
