Now, chef Touitou (educated at the Plaza Athénée with Alain Ducasse, at Septime with Bertrand Grébaut, at Servan with Tatiana Levha) has inherited this lovely address and has re-imagined it, while still keeping respecting spirit of his grandmother and what she built.
The cuisine has all been re-imagined and re-interpreted from his grandmother's old recipes, thus mixing beautifully two generations of impeccable cooking skills. Do try veal tartare (of unparalleled freshness) and the mouthwatering scallops with truffles, then move on to a unforgettable main such as the Quercy lamb and saffron carrots.
