Opting to do things in a unique way, the acclaimed chef has placed Kevin de Porre (Kei, Plaza Athénée, Shangri-La Paris) and Erwan Ledru (restaurant Arnaud Nicolas, Meurice, Lasserre, Le Rech) in charge. Their brief is to serve “contrasting cuisines” showcasing different culinary contrasts inspired by land and the sea. And as with Substance, the decor - by architect Michel Amar - is of contemporary elegance with luxury furnishings combined with organic materials. Expect high-end cuisine in laid-back surroundings.
