La Halle aux Grains by Michel Bras

Michel Bras has brought his refined Michelin-starred cuisine to the restaurant located within the Bourse de Commerce, the Pinault Collection’s home in Paris.

François Pinault, the billionaire luxury brand owner, has converted the 18th century Bourse de commerce into art museum with Japanese architect Tadao Ando - who he previously teamed up with Ando to open Venice's Palazzo Grassi and Punta della Dogana. Regarded as one of Paris’s most historically important but least known buildings, La Halle aux Grains houses three floors of galleries displaying contemporary works collected by Pinault.

The building's rotunda once held the city's grain market - hence the name of the restaurant headed up arguably one of France's most venerated chefs. Located on the building’s third floor, the restaurant provides views over the central rotunda and onto the city. The chef, who famously gave up 3 Michelin stars, is renowned for the purity of his cooking - drawing on complex techniques to elevate humble ingredients with astonishing, often whimsical results.
