Shabour by Assaf Granit

Hidden in the Sentier neighborhood, Shabour has just set up shop by Israel’s most successful and self-taught chef.

Situated in a former jazz club in Paris and with the Balagan team at the helm, Shabour serves up vibrant dishes inspired by Israeli, Mediterranean and Oriental recipes. Significantly smaller than his other restaurants, Shabour is a countertop kitchen and bar with just four chefs headed up by renowned chef Assaf Granit - a co-owner of award-winning The Palomar and The Barbary in London. 

Granit’s menu of Mediterranean-style sharing plates is served from an open kitchen with a backdrop of the building’s original brickwork. The chef’s native Jerusalem is at the heart of the menu, but it also draws upon many traditional Mediterranean flavours and textures that stretch from North Africa to The Levant.

Signature Dishes

Grilled squid with harissa sauce and peach and babba ganoush; red mullet, matbucha anis and feta and tea-smoked poached egg with tahini foam, salmon eggs and caviar.
