Thierry Marx takes the helm of the world-renowned Eiffel tower brasserie Le 58 Tour Eiffel.

Thierry Marx has trained with some of the country's best chefs at restaurants including Ledoyen, Taillevent and Robuchon and has two Michelin stars since 2012 for his signature restaurant Sur Mesure at the Mandarin Oriental in Paris. The designer Ramy Fischler and architect Nicola Delon have created an interior with a modern, inspiring design, opting for natural, eco-friendly materials. 

Expect a contemporary brasserie dishing up Parisian bistro cuisine with original and sustainability-oriented takes on traditional dishes with dishes such as blue lobster with quinoa and chicken cannelloni gratin, with spinach, Ile-de-France ricotta and Marengo jus.
