Akira Back at Prince de Galles

The adrenaline-fueled Michelin-starred, Korean culinary master brings his culinary creativity, and blend of Japanese fare with Korean essence to Paris.

The Korean-American chef (a former professional snowboarder) has built up a successful empire of restaurants from Las Vegas to Jakarta and Toronto to Bangkok, with his self-described menu of modern Japanese food with Korean accents. Dine on signature dishes including tuna "pizza" to crispy tacos with wagyu bulgogi topped with roasted tomato ponzu and and Miso Black Cod served with a sake emulsion and shishito peppers.

This glamorous contemporary outpost - his first European venture - is housed in the Prince de Galles hotel - an Art Deco gem in the center of town - and features a sleek Japanese and 1930s-inspired setting. Open Wednesday to Sunday.

The half-half tuna / mushroom pizza with umami-flavoured aioli made from ponzu sauce, tuna sashimi, micro shiso, mushrooms and truffle oil; salmon tataki with su-miso and wasabi mustard sauce; octopus crudo with onion salsa, olive oil and tosazu; Black Angus beef taco with Korean sauce and Japanese ponzu sauce with roasted tomatoes and Miso Black Cod served with a sake emulsion and shishito peppers.
