Jean Imbert au Plaza Athénée

The celebrity chef, who has taken over from Ducasse at the Plaza Athénée restaurant reveals his latest and most ambitious opening.

Since rebooting the hotel’s Le Relais Plaza, a brasserie that has been one of the most stylish spots in town since its inception, in 1936. Next, Imbert tackles the creation of a fine-dining establishment to occupy the rooms overlooking the courtyard garden, where Alain Ducasse earned his three Michelin stars before leaving the hotel after 21 years - and regarded as one of Paris's most iconic restaurants.

The revamped dining room centres around a grand Royal Table crafted from antique Breccia marble and 20,000 gold leaves adorning the room alongside the gilded ceiling. Jean Imbert’s vision is to restore the glory of ancient French cuisine, with a new energy and vibrant takewith updated takes on classic recipes – some 250 years old – celebrating France’s rich culinary heritage. 

The winner of the French edition of “Top Chef” in 2012, Imbert already runs several other restaurants, including Mamie par Jean Imbert in Paris, which specializes in recipes gleaned from his grandmother, two ventures with musician Pharrell Williams: Swan in Miami, and To Share in Saint-Tropez.

Signature Dishes

Langouste en Bellevue served with mixed vegetables; the “du Barry-style” soup, served with small, stewed shellfish from Brittany; Canard à la Bigarade a tribute to the original version of duck with orange sauce, which is topped with citrus fruits before being roasted and the turbot soufflé cooked whole after being and souffléed with watercress, and then prepared at the table.
