The noteworthy Franco-Italian born chef Fabien Zannier is constantly raising the standard from the products, which are all sourced from the nearby Aligre market (or from his native Tuscan region of Maremma), to his unique recipes.
Truffle has a special place at Baffo, as per Tuscan tradition, so during truffle season do have a look through the many truffle-based and inspired dishes. Just be sure and try the incredible 'Gambero Rosso terra' dish made with special red sicilian shrimp, speck, lime and crumbled hazelnut, simply delightful and extremely rare to find outside of Italy. The 'Risotto Nero' the buttery temptation of squid, cuttlefish ink and salmon eggs is equally a must.
And of course, as to be expected the wines are sourced from the best vineyards in Italy. Expect a bacchanalian delight.
