There are few chef's in the city with the clout of Mathieu Pacaud, son of the legendary cook Bernard Pacaud, and three michelin star winner himself. But it is not merely the stars and the family linegage that have the locals clammering for a table, it is more than that, it is rather his attention to detail and care that he offers each establishment. A visit to a Pacaud restaurant is more than just a dinner or a lunch, it's an experience, and perhaps never was this more true than in Histoires, aptly named Stories.
Seating merely a dozen people each night, the restaurant’s menu comprises of only 15 dishes, inspired by music, art and literary influencers. Exactly how the inspiration is transformed from a Dante poem to a dish, still remains the dinner's mystery but one thing is sure, the result on the plate could be considered poetic.
Try the fresh sole with sea urchins, mushrooms and truffles, the langoustines with caviar and anise cream, followed by the turbot with beans, and top it all off with Chocolat Madong made with crunchy white chocolate with mascarpone ice cream.
